The caviar is extracted using the “milking” technique, an innovative and respectful process that allows the precious pearls to be collected without harming the sturgeon, ensuring its well-being and contributing to the sustainability of the species. This method preserves the exceptional quality of the delicate eggs, measuring between 2.5 and 3 mm, which offer a firm yet creamy texture and a refined flavor that combines a subtle hint of nuttiness with a touch of iodine.
